Non-conjugated and accumulated unsaturated straight-chain and branched-chain aliphatic primary alcohols/aldehydes/acids, acetals and esters with esters containing unsaturated alcohols and acetals containing unsaturated alcohols or aldehydes. No aromatic or heteroaromatic moiety as a component of an ester or acetal.


Chemical groups for flavouring substances

European Parliament and Council Regulation (EC) N° 2232/96 sets out the basic rules for the use of flavouring substances in or on foodstuffs in the EU. It furthermore lays down a procedure for the establishment of a EU-wide positive list of flavouring substances. After its establishment only those flavouring substances listed may be added to foods.

The substances of the register are distributed in groups of structurally related compounds which are expected to show some metabolic and biological behaviour in common.
